Carl brings up a point. Olivia did get a look at Eric’s whole life, even if we only saw bits of it. The last part even did include her, quite prominently, whatever that might imply. Is this different? Is this fair?
I’d say it would be fair if they did it to each other, rather than to others.
Also couldn’t Olivia just fly as well?

First off, looking at Eric’s memories was probably at least partially to help him, while this is just so John can manipulate her into changing her mind so she can join a band.
Second, and more importantly. what they are doing is different, in the sense that Eric was more “look, but don’t touch”, while this is INTENTIONALLY messing with other people’s emotions. Not only that, but they don’t even necessarily even really KNOW what they’re doing, which is probably gonna end up causing massive amounts of collateral damage. (stalker w/ a crush, anybody?)
